Recipe for Chocolate Chews

Little clusters of goodness. Perfect when you want dessert now!

Ingredients:

  • 3/4 cup Virgin coconut oil (Virgin Oil de Coco-Creme )
  • 1/2 cup honey, maple syrup or agave nectar*
  • 1 tsp. vanilla extract or 4 drops vanilla essence**
  • 1/8 tsp. Himalayan salt crystals
  • dash of cayenne pepper
  • 1/2 cup raw cacao powder
  • 1/8-1/4 cup raw cacao nibs
  • 1/4 cup goji berries
  • 1 cup coconut chips or fine shredded
  • 1/2 cup soaked and dehydrated walnuts, almonds or pumpkin seeds

Method:

Step 1: Mix coconut oil, agave, vanilla, salt and cayenne together in a blender until smooth

Step 2: Pour into a bowl and hand mix in the cacao powder until well mixed.

Step 3: Add the remainder of ingredients and stir well.

Step 4: Spoon globules of batter onto a cookie sheet and refrigerate or freeze until set (about 10 minutes)

Store in a container in your refrigerator and enjoy often!

Notes:

* Please note that agave nectar is not low glycemic and is not my prefererd sweetener as it can spike insulin levels. Instead, try honey or maple syrup, and for diabetics and cancer patients or if you want to lose weight, then use xylitol or erythritol which is my first choice.

**You could also use cherry, almond, maple, cinnamon, etc
