Easy Raw Truffle Treat

These are so easy and so great to have around when you are trying to break away from unhealthy treats. When I was first inspired to try and go 100% raw (my first target was one month), I had these on hand so I’d have something so yummy, I wasn’t tempted to go out and get something unhealthy.

I’ve seen many, many great recipes for this type of truffle, but I found they didn’t need to be complicated or too sweet to taste great and satisfy my sweet tooth.   If I’m serving them to others, I roll them up and fancy them up a bit.  If it’s just for me – I just keep the dough in the frig and take out a spoonful!

Date Nut Truffle Treats

In your food processor:

  • 1 1/2  -2 cups of Walnuts
  • 3-5 Medjool Dates (seeded)

Process until you have chunky granules.  Add a teeny, tiny bit of water to make the batter hold together.  If you add too much, it will be too gooey to easily work with.  You can then roll them into balls, or just leave the dough in a covered dish for snacking on.  You can also press it into a pie pan and layer on some fruit for a delicious raw ‘pie.’

That’s my basic recipe.  There are all kinds of things you can add, or ways to use it.   Some of my favorite additions:

  • Carob powder
  • Cinnamon
  • Vanilla  (if you add vanilla, add it before you add the water as you’ll need less water)
  • Raisins, finely chopped
  • Other nuts or seeds coarsely chopped

You can also sneak in some super foods like maca, a good tasting protein powder, goji berries, hemp seeds, kelp powder . . .

If you roll them into balls, you can then also roll them in a topping such as –

  • Coconut flakes
  • Finely chopped nuts
  • More carob powder (or raw cacao)

The first recipe I tried used 1/2 cup of dates to 1 cup of nuts.  This was way too sweet for my taste.  I suggest starting with just a few and adding more if you need it sweeter.  Coconut milk was also used in the original recipe, but since that’s not something I usually have on hand, I tried it with water and they came out just as good as the ones with coconut milk.
