Soup in the summer time might not initially sound ideal but when it’s fresh, raw, and nutrient rich, it’s the perfect treat. These blended salads and raw soup recipes are light yet filling and will give you the energy you need to keep active and stay cool this season. They’re a perfect compliment for a smoothie lifestyle.

Fennelopicus

Ingredients:raw recipe with fennel

  • 1/3 to 1⁄2 cup water
  • 1⁄2 lemon, juice of
  • 1 tomato
  • 1 cup fennel bulb*
  • 2 cups romaine lettuce
  • 1 cup dill leaves or fennel leaves*
  • 1 red bell pepper, seeded and diced
  • 1⁄2 avocado
  • 2 green onions
  • 2 T nori flakes (optional)

Directions:

Blend in the water with the lemon juice and tomato, then add in the other ingredients progressively. Blend until smooth. Pour in a bowl, then add to the soup:

  • 1⁄2 avocado, diced
  • 2 green onion, chopped

Mix everything together and serve.

*Fennel is a European vegetable you can find in many stores.

Coconut Kale Soup

Ingredients:raw soup recipe

  • 3 tomatoes (small to medium)
  • 1 cup coconut water
  • 1 cup of romaine lettuce
  • 2 cups kale leaves
  • 5-6 dried tomatoes, soaked in water*
  • 2 T lemon juice
  • 1⁄4 cups fresh basil
  • 1⁄2 cup fresh cilantro
  • 1 inch fresh ginger
  • meat of 1 young coconut
  • red bell pepper, chopped fine

Directions:

Blend the tomatoes with coconut water until you have tomato “juice”, then add in the other ingredients progressively — except for the red bell pepper — and blend until smooth. Pour into a bowl and garnish with the red bell pepper (make sure it is chopped fine).

* If you have a Blendtec Total Blender you don’t need to soak the dried tomatoes in water.

Pure Green Energy

Ingredients:

  • 3 cups peeled and diced cucumbers
  • 1⁄2 cup fresh dill
  • 1⁄2 cup fresh parsley
  • 3 green onions
  • 3 cups romaine lettuce
  • 4 T tahini

Directions:

Blend in the cucumbers until the mixture is liquid, then add in the other ingredients progressively. Blend until smooth.

Classic Blended Salad

Ingredients:

  • 3 tomatoes, roughly chopped
  • 1⁄2 lemon, juice of
  • 2 cups lettuce
  • 1 cup spinach
  • 2 green onion
  • 1⁄4 cup parsley
  • 3 stalks of celery
  • 1⁄2 avocado
  • 2 T dulse flakes
  • 1 T nori flakes (optional)
  • 1 T paprika (optional)

Directions:

Blend the tomatoes first, until they turn liquid. Then add in the lemon juice, greens, and avocado, pushing with the celery stalks, until the entire mixture is blended. Flavor with dulse flakes, nori flakes, and/or paprika.

Blended Salad for Oneraw soup recipe

Ingredients:

  • 1 tomato
  • 1 cup peeled cucumber
  • 3 cups of baby greens mix
  • 1⁄2 lemon, juice of
  • 1⁄2 red bell pepper
  • 1⁄2 avocado
  • 1-2 stalks celery
  • celery salt to taste

Directions:

Blend the tomato, cucumber and lemon juice first, until the mixture is liquid. Add in red bell pepper, baby greens, and avocado progressively, pushing with the celery stalks until the entire mixture is blended. Add in the “celery salt” to taste, or any other favorite seasoning.

Arugula Wants You

Ingredients:

  • 2 cups of sweet cherry tomatoes
  • 1 T apple cider vinegar or lemon juice
  • 3 cups romaine lettuce, or other lettuce
  • 1 1⁄2 cup arugula
  • 2 green onions, chopped
  • 1 avocado
  • 1 cup dulse, rinsed (optional)*

Directions:

Blend the cherry tomatoes until the mixture is liquid. Add in other ingredients progressively —except dulse—and blend until smooth. Take one cup of dulse (whole leaf), and rinse it under water for about 15-20 seconds, then squeeze it, chop it, and mix it in with the soup. Serve.

* Whole leaf dulse (a seaweed), can be found in most health food stores.

Zinc Special

Ingredients:

  • 1-2 tomatoes
  • 1 cucumber, peeled
  • 1⁄2 red bell pepper
  • 1 lemon, juice of
  • 1⁄2 cup dill or parsley
  • 2-3 cups lettuce
  • 1 cup sunflower greens (optional)
  • 3 celery stalks
  • 1/3 cup pumpkin seeds
  • 3 T dulse powder or flakes chopped chives

Directions:

Blend tomatoes, cucumbers, bell pepper and lemon juice until the mixture is liquid. Add in the greens and pumpkin seeds and blend until smooth, using the celery stalks to help you push in. The celery stalks will blend too. Pour into a bowl and add in dulse powder and chopped chives to taste.

A Dinner With Ann

Ingredients:raw soup recipe

  • 1 cup water
  • 2 tomatoes
  • 1 T apple cider or balsamic vinegar
  • 1 small apple
  • 1 cup sunflower greens*
  • 1 cup buckwheat greens*
  • 2 cups baby green mix**
  • 2/3 cup lentil sprouts***
  • 1⁄2 to 1 avocado
  • 2-4 T dulse flakes or celery salt

Directions:

Blend in water, tomatoes, vinegar and apple until the mixture is liquid. Add in the greens, lentil sprouts and avocado until smooth. Mix in the seasonings of your choice.

* Sunflower and buckwheat greens can be found in some health food stores or easily grown indoors (check out The Sprout Book, by Ann Wigmore for simple directions).

** Baby green mix can be found in most health food stores and many grocery stores. Also called “spring mix”.

*** Lentil sprouts can be easily grown at home. Note: For this recipe, the balsamic vinegar is quite nice.

My Energy Soup

Ingredients:

  • 1 cup water
  • 2 T apple cider vinegar, or lemon juice
  • 1 small apple
  • 2-3 cups sunflower greens
  • 1 cup radish sprouts
  • 2 cups romaine lettuce or spinach
  • 2 stalks celery
  • 1⁄2 avocado
  • 1 T curry powder (optional)
  • 2 T dulse flakes
  • 1 cup whole dulse, rinsed (optional)

Directions:

Blend water, vinegar and apple together until the mixture is liquid. Add in the greens, celery and avocado and blend until smooth. Blend in curry powder if desired. Pour in a bowl, and mix in the dulse flakes, and if desired, the whole dulse, (previously rinsed under water, squeezed and chopped.)

Green Oomph

Ingredients:green smoothie soup

  • 1⁄2 cup water
  • 1 T balsamic or apple cider vinegar
  • 2 tomatoes
  • 1 cucumber (small), peeled
  • 1 cup sunflower greens
  • 1 cup buckwheat greens
  • 3 cups spinach
  • 1 cup parsley
  • 1⁄2 avocado
  • 1⁄2 clove garlic (optional)
  • 2 T dulse flakes or sea salt to taste (optional)

Directions:

Blend water, vinegar, tomatoes, and cucumbers until the mixture is liquid. Add in the greens, avocado, and garlic progressively and blend until smooth. Season with dulse flakes or sea salt to taste.
