Raw Recipe: Try This Versatile Walnut Based “Meatloaf”

What I love about this recipe is it’s versatility. It can bemeatloaf,” but it could also be “tuna salad.” Because of the particular blend of veggies, spices and the consistency from the walnuts, I found myself thinking of it as a non-fishy tuna salad. Served it up over some leafy greens and chopped veggies for salad or use it as filling in Romain lettuce for “tacos.” Whichever way you choose to enjoy it, it’s a a tasty way to get a good dose of veggies and a healthy hit of omega 3’s.

Walnut Based “Meatloaf” Recipe

Ingredients:

  • 2 cups walnutsmeatloaf230x162
  • 1 red pepper
  • ½ cup sweet onion, minced
  • ½ cup celery, minced
  • 1 tomato
  • 2 cloves of garlic
  • 1 tsp onion
  • Dash of oregano
  • ½ tsp of miso
  • Salt and pepper to taste

Directions:

Add all the above ingredients to a food processor, pulse chop until evenly distributed. Place meatloaf on a platter and shape into a loaf and serve.

Next time, I would try adding these as well: dill, cayenne pepper, shredded carrots, parsley or cilantro
