Raw Recipe: Lentil Salad

Low in calories and high in nutrition, lentils are the perfect addition to your raw diet.  They lower cholesterol, improve heart and digestive health, provide a good source of protein and stabilize blood sugar.

Raw Recipe: Lentil Salad

Ingredients:

  • red lentils, soaked overnight
  • 1⁄2 red onion
  • 1 cucumber
  • 4 tomatoes
  • 1 zucchini
  • olive oil and apple cider vinegar for dressing

Directions:

Add altogether. Top with oil and apple cider vinegar dressing to taste. Makes 1 to 2 servings.
