Raw Recipe: Divine Pecan Pie

Looking for a delicious addition to your holiday meal. Try this divine recipe for pecan pie! Pecans have a naturally buttery yet rich flavour and are great for an energy boost.

Divine Pecan Pie

Ingredients:

  • 2 cups raw macadamia nuts
  • 40 honey dates, soaked and pitted
  • 1 tsp.ground cinnamon
  • ¼ tsp. salt
  • 1 Tbs.vanilla flavor, by Frontier
  • 2 cups raw pecans
  • Coconut oil and
  • ¼ cup raw dried coconut for the bottom of the pan

Directions:

Combine the raw macadamia nuts and 10 of the dates in a food processor, and process until they are coarsely ground and clumping together. Grease the bottom of a 9-inch pie pan with a little coconut oil and add dried coconut to keep the pie from sticking to the pie pan. Press the mixture evenly into the bottom of pan and up the sides to form a crust. Set aside.

Combine the remaining dates, cinnamon, salt, and vanilla in a food processor, and process until the mixture has a smooth, uniform consistency. Spread the date filling evenly over the crust. Arrange the raw pecans on top of the date mixture and press lightly. Slice and serve.
