Vanilla Almond Granola with Chocolate Nuggets

Made without chocolate, this simple yet very tasty granola is wonderful as the background for your awesome cold breakfast. Add chocolate chips, and get ready to be wowed! You can use a few teaspoons of sweet cacao nibs if you don’t want or don’t have chocolate chips.

Ingredients

  • 1 cup raw buckwheat groats, raw

  • 1/2 cup whole unblanched almonds, raw (optional)

  • 3 T raw honey
  • 2 T unrefined coconut oil
  • 1/2 t vanilla
  • Sea salt
  • 1/2 cup chopped Basic Dark Chocolate

Directions:

Soak the buckwheat overnight in plenty of water. Then, rinse it until it is no longer slimy. Set it in a bowl. At the same time, soak the almonds overnight, rinse them, and chop them coarsely. Add both to a large bowl.

Stir the honey and coconut oil (melted) together until mixed, then add the vanilla and a pinch of salt. Pour the mix over the buckwheat/almonds, and stir them well to coat.

Spread the granola over a mesh dehydrator sheet, and dehydrate overnight at 115 degrees until completely dry and crisp.

Once dry and cool, toss the granola with the chopped dark chocolate, and transfer to a bowl n the fridge. Enjoy with nut milk for a great breakfast, or decadent afternoon snack.
