Raw Food Recipe: Scrumptious Cookies

These cookies are not only scrumptious, they are nutritious too! Raw almonds are packed with omega-3 fatty acids and antioxidants. A diet rich in walnuts may also help reduce stress. So go ahead – have another one.

 

Ingredients

  • 2 1/2 cups raw walnuts
  • 12 dates
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla flavor by Frontier
  • 2 1/4 Tablespoons raw cacao nibs
  • 1/2 teaspoon Himalayan salt
  • 1 1/4 Tablespoon coconut oil

Directions:

Place dates in food processor and mix until smooth. Add walnuts, cinnamon, salt and coconut oil, process until smooth. Add cacao nibs, process until nibs are well distributed. Place tablespoon sized mounds on a platter and flatten into cookie style rounds. These marvelous cookies are best enjoyed when served chilled.
