Who Says a Raw Food Diet Isn’t Delicious? Try This Main Course ‘Meatloaf’ Tonight!

Food should be fun, easy, and of course, really delicious. Food should inspire, energize, and awaken the senses.  Raw foodies often say that one of the major benefits of eating raw food is that they get to eat as much as they want because they’re not eating anything detrimental to their health. Give it a try with this tasty recipe from The Simple Gourmet and wow your family and friends!

You Can’t Believe Its Not “Meatloaf”!

Ingredients:

  • 2 cups walnuts
  • 1 red pepper
  • ½ cup sweet onion, minced
  • ½ cup celery, minced
  • 1 tomato
  • 2 cloves of garlic
  • 1 tsp onion
  • Dash of oregano
  • ½ tsp of miso
  • Salt and pepper to taste

Directions: Add all the above ingredients to a food processor, pulse chop until evenly distributed. Place meatloaf on a platter and shape into a loaf and serve.

*Note: This actually looks like real meatloaf and is absolutely delicious!

Raw Tabouli Salad

Ingredients:

  • 1 bunch cilantro
  • 1 bunch parsley
  • 2 scallions, sliced
  • ½ pint cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup of raw almonds (soaked or unsoaked, your choice)
  • 1 lemon
  • 1 Tbsp olive oil
  • 1 Tbsp agave
  • 1 tsp salt

Directions: Loosely separate the cilantro and parsley leaves from the stems. Rinse well under running water in a salad spinner and spin dry. Chop the greens well and add the green onions, tomato, and avocado. In a food processor or blender whirl the almonds until fine. Add to the vegetables. In a small bowl mix the juice of the lemon with the oil, salt, and agave. Pour over the vegetables and mix well.
