Fresh Recipe Spotlight: A One-Day Plan

There’s plenty of time left in the season to enjoy sweet fruits and nutrient-packed veggies. We’ve done the planning for you, all you have to do is pick your favorite day of the week! Check out the recipes below for a full day’s worth of fresh and delicious meals you can make in a snap!

Fruit Kebabs

Ingredients: (Fruits of Your Choice)

  • Strawberries
  • Mango
  • Cantaloupe
  • Pineapple
  • Dates
  • Apples, etc.

Directions: Thread the pieces of fruit onto small skewers. Sprinkle with lime juice and arrange on a glass platter. Enjoy with a tall glass of water!

It’s a Peach of a Smoothie

Ingredients:

  • 4 peaches
  • 4-5 kale leaves
  • ½ bunch mint
  • water (to taste)

Directions:  Blend and enjoy!

Citrus and Greens Salad

Ingredients:

  • 4 kumquats; washed and sliced thin
  • 2 grapefruit; peel and section
  • 1 avocado; peel, seed, and cut into section size
  • 1 head bibb lettuce; washed and torn
  • 1 bunch watercress; washed, leaves only, and coarsely chopped
  • ¼ -½ cup ground macadamia nuts (optional)

Dressing Ingredients:

  • ½ cup grapefruit juice
  • Juice of 2 key limes or ½ lemon
  • 2 tablespoons fresh dill
  • ¼ teaspoon cayenne pepper (optional)

Directions: Prepare dressing and let sit for 10 minutes. Gently toss the salad, arrange on a plate and then sprinkle on the nuts, if using.
