3 Refreshing Raw Food Watermelon Recipes for Summer: Watermelon Juice, Watermelon Sorbet and Watermelon Gazpacho!

What says summertime better than Watermelon?  Oh, so very hydrating and sweet!!!

My daughter is very much into horses these days and actually had her first horse show this past weekend.  From 6AM until 6PM we were at the equestrian center and boy does it get hot.  Most of the girls are not interested in eating very much when they get really tired and hot.  Of all the snacks and beverages I packed, the watermelon was the biggest hit amongst all the girls … and the horses who love the rinds.  It is a snack we can all feel good about.

Here are a few amazing recipes to help you maximize your melon season this summer:

Watermelons are an excellent source of several vitamins:

Vitamin A, which helps maintain eye health and is an antioxidant; vitamin C, which strengthens immunity, heal wounds, prevent cell damage, promote healthy teeth and gums; and vitamin B6, which helps brain function and helps convert protein to energy.

Tomatoes have been highly touted as a great source for lycopene, a powerful antioxidant that helps fight heart disease and several types of cancer — prostate cancer in particular. Watermelon, however, has the highest concentrations of lycopene of any fresh fruit or vegetable.

Watermelon is a great source of potassium, which helps muscle and nerve function, helps maintain the body’s proper electrolyte and acid-base balance, and helps lower the risk of high blood pressure.
Watermelon also contains the amino acids citrulline and arginine, which can help maintain arteries, blood flow and overall cardiovascular function.

Of course, our favorite way to eat watermelon is in chunks or slices right of the rind.  Here are a few more ways to enjoy the star of summer:

Watermelon Juicer

Ingredients:

  • 3 cups cubed watermelon
  • 1 ½ cups pure water
  • 2-3 limes, juiced

Directions:

Puree seedless watermelon in blender and strain.
Mix strained watermelon juice with water and lime juice.
Sweeten to taste with honey or agave nectar.

Serve cold!

This is also great to freeze and then serve as a slushy.

Watermelon Sorbet

Ingredients:

  • 4 cups watermelon
  • 1 orange, peeled
  • ½ to 1 lemon, juiced

Directions:

Puree watermelon and pour into ice cube trays.
Meanwhile, blend lemon juice and orange sections.
Add frozen watermelon cubes, pulse in blender.

Watermelon Gazpacho

 

Ingredients:

  • approx 3 cups of watermelon, chopped
  • 1 cucumber, diced
  • 1 red or yellow bell pepper, diced
  • 1 small onion, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 jalapeno (or to taste)
  • 2 tbsp fresh chopped parsley or cilantro
  • dash salt and pepper to taste

Directions:

In a blend or food processor, place about half of the watermelon, cucumber, pepper, and onion and all of the jalapeno. Add olive oil and lemon juice and puree until smooth. Combine the remaining ingredients in a large bowl and mix well. Add to pureed ingredients and stir to combine. Add more salt and pepper, to taste. Chill for at least one hour, to allow flavors to combine, and stir well before serving.
