Raw Food Recipe: Wild Green Pudding

Puddings enrich the diversity of textures and flavors you can enjoy in green smoothies. Puddings are a thicker smoothie that you can eat with a spoon. Green puddings generally don’t contain any water and are often thickened with mangoes, blueberries, persimmons, chia seeds, dates, coconut, etc.

We recommend using a tamper, which often comes packaged with blender, to help mix these thicker smoothies as you blend. I prepared the following green pudding in a Vitamix but it could be made in other blenders, like the BlendTec. The black plastic device in the picture above is a tamper I used.

 

Wild Green Pudding

 

Ingredients:

  • Diced Mango1 large mango, peeled, seeded, and sliced
  • 1 ripe peach
  • Handful strawberries
  • 1 bunch (1/4lbs) lambsquarters
  • No water needed

 

Directions:

Blend all ingredients.

You must use tamper for this recipe.

Yields 1 quart.

 

Lambsquarters

LambsquartersCommon lambsquarters (please see this weed on a photo above), Chenopodium album, are a summer annual that grows to about 3 1/2 feet tall. The leaves are light green and triangular, ranging from 1/14 to 10 inches long and are on a long stem. The stems are light green, erect, hairless and have varying degrees of red. The flowers are green and inconspicuous and occur from June through September. The seeds are covered with a thin papery coating.

To find lambsquarters locally, talk to any farmer and they will point this weed to you and even sell you a box of them. I often go to farms and ask permission to fill a large banana box of lambsquarters for $20.
