Delicious and Creative Party Recipes That Look Just Like….

The easiest way to get your kids excited about eating fruits and veggies: create edible arts mimicking things they are naturally drawn to

I  know that most of the readers of the Raw Mom blog will go to any length to make their kids eat more raw fruits and veggies. And  I also know that some of you have incredible creativity and talent to come up with the most amazing creations made of fruits and veggies. One long time member of our raw mom community  has shared the following amazing photos of the edible art, aka birthday party food she prepared for her son’s birthday.

Meet Anna, a 21 year old proud mama of 1 year old Axel, who lives in South Australia with her husband. She  has tremendous talent (as you will see below) to bring a child’s imagination to life using raw fruits.  Mini cheesecakes and fruit kebabs served with coconut cream  followed by a fruit train?!?! Now this is a party I wish I was invited to attend! I can just imagine the smile on her son’s face, when he saw this melon train fully loaded with cut up fruits! AMAZING!

But, I bet the mini cheesecakes with blueberries  were just as popular!  They are the perfect size for little fingers to grab and eat! This dessert will take a little extra time to prepare, but once you whip up a batch or two, you can just keep them in the freezer and eat them whenever you get those cravings to eat something sweet.

Mini Citrus Cheesecakes

( I didn’t have a recipe for the filling, just made it up on the spot, so can’t remember EXACT quantities, but something like this:)

The Base:

1 cup cashews

1 tbsp raw organic honey

1/4 cup coconut oil

2 tsp vanilla extract

¼ tsp salt

2 tsp lemon juice

  • First process cashews to flour.
  • Add remaining ingredients and process again.
  • Spoon mixure little pattie pans on a tray or in a mini cupcake tin if you have one
  • Put into freezer and start on the filling

For the filling:

2 cups soaked cashews, (preferable soaked 6 or more hours, but at least 2hrs, then drain and rinse)

Juice of 2 medium sized lemons

Juice of 1 lime

1 tbsp of mixed lemon and lime zest

1/2 tsp vanilla extract

1/2tsp stevia

Water (You may need a splash of water to get it to blend smooth, but try not use too much, cause you want the mixture thick)

Directions:

  • Blend all the filling ingredients in food processor, and spoon onto your little bases.
  • Put back in the freezer. When frozen you can peel off all the pattie pans and store in a air tight container.
  • Get them out 30mins prior to serving and top with a berry, or some lemon and lime zest if desired.
