 Raw Food Recipes: Creamy Cilantro Soup, Green Juice & Celery Salad

Creamy Cilantro Soup

Ingredients:

Makes 4 servings

  • cilantro soup1 zucchini, chopped
  • 1 bunch cilantro, stems removed (2 cups)
  • 1 red, yellow, or orange bell pepper
  • 1/2 apple, chopped
  • 1/2 cup water, plus additional to thin as needed
  • 1 tablespoon Bragg Liquid Aminos or 2 teaspoons tamari
  • 1/2 teaspoon sea salt, or to taste
  • 1 teaspoon onion powder, optional
  • dash cayenne pepper
  • 1 avocado, chopped
  • Optional: dulse flakes, diced bell pepper, fresh corn off the cob, sunflower greens, chopped romaine, to garnish

Directions:

  1. Place all ingredients except the avocado and optional garnishes in a blender and process until smooth.
  2. Add the avocado and blend.
  3. Serve immediately, with garnishes if desired, or store in the refrigerator for up to 24 hours.

Elaina’s Alkalizing Green Juice

Ingredients:

Makes 6 cups, 1 full day’s supply

  • cucumber juice2 large cucumbers, cut into quarters
  • 1-2 heads celery
  • 5 leaves dinosaur kale
  • 1/4 bunch cilantro
  • 1 lemon, juiced
  • Optional: 1 apple with seeds

Directions:

  1. Juice all ingredients.
  2. Store in sealed glass jars filled to the top. Alkalizing Green Juice will keep for two days if made in a slow-speed masticating juicer (Green Life, Omega 8002, or Samson) or 1 day if made in another juicer.

Celery Salad

Ingredients:

Makes 3 cups

  • 7 stalks celery, very thinly sliced on mandoline
  • 1 ½ radishes, halved and very thinly sliced
  • ½ granny smith apple, julienned very thinly
  • ¼ small red onion, minced
  • Celery Salad¼ tsp dried sage
  • ½ tsp minced rosemary
  • ¼ tsp Himalayan salt
  • 2 tsp lemon juice
  • 1 ½ Tbs olive oil
  • pinch of kelp powder

Directions:

  1. Mix everything together and taste for salt and lemon flavors.
  2. Store in a glass container for 1 week.
