Fruity Treasure Pops: How to Make Healthy Fruit Popsicles
Written by admin on June 16, 2010 – -- by Stacey Terry
Believe it or not, it’s hot and sunny (finally!) as I type this today in beautiful Winnipeg, Manitoba! Normally, my city has a reputation for ice and snow (and the occasional flood here and there), so with thoughts of winter always lurking, perhaps it’s fitting that I’m coming to you today with a frozen raw food treat!
In anticipation of the 7-Day Summer Slurping Sensation, I’ve been challenging myself to come up with some new ways to enjoy my fruits and leafy greens together. A few rainy days ago, I whipped up a little recipe for fruit popsicles, and it’s finally nice enough today to enjoy them. So you’ll have to forgive the somewhat sticky, juicey fingers that are bringing you today’s summer healthy idea because I’ve been enjoying the fruits, quite literally, of my icy labours!
As a kid, I think I survived my summers on freezies… You remember… those little plastic frozen rods of water, sugar, and dye? Heheh… the more psychedelic and unnatural the colour, the more I wanted to try it.
Well… thankfully, my freezie days eventually came to an end, but if anything, I think summers only get hotter here in Manitoba, so it would be really nice to have a raw food frozen treat on the blistering, scorching days when -40 degrees Celsius doesn’t seem like such a bad thing after all.
Thankfully, I now have the knowledge and the creativity to make that happen! If you’re content to let Mr. Freezie remain in whatever igloo he came from indefinitely, then I invite you to try one of my fruity treasure pops!
So… if you can’t look forward to fake dyes, what can you look forward to?
I’m a big fan of fruit, so for me… this was a no-brainer. I made my green juice popsicle recipe a lot more fun by adding treasure! Colourful, fruity treasure!
Fruity Treasure Pops
Ingredients:- 2 – 3 apples (use more apples for sweeter pops)
- 1 organic English cucumber
- 1/2 lemon, juice of
- various small quantities of fruits for your treasure
Directions:
Juice your apples, cucumber, and lemon (you can use any ingredients that will give you a relatively clear or light coloured juice). I strained my juice through a clean tea towel to try and remove more pulp and get a little more clarity out of my juice. And I think if I’d peeled my cucumber, then the end visual result might have been even more dramatic, but I like knowing that the greener my juice, the more nutrition I can enjoy!
Take your popsicle moulds and add a few bits of your favourite fruits to each of the containers. (You can also use dixie cups and sticks if you don’t have a popsicle mould.) I filled my popsicle containers with strawberries, red grapes, pitted fresh cherries, blueberries, banana slices, starfruit slices, and peach slices.
Pour in your juice. I ended up being just a touch short to fill my moulds, so I just topped each slot up with a little water.
Of course, your next step is to put your Fruity Treasure Pops in the freezer and then head outside and do an earnest sun dance.
Hopefully by the time the sun rewards you for shaking your beautiful bones and impressing the neighbours, your popsicles will be frozen and ready for serious chin dribbling.
I’ve enjoyed the blueberry one so far… and I love how the lemon adds a totally yummy zing! Using a wee bit of lime in your green juice would be a good choice too! And as you can see, Mr. Cherry is about to meet his delicious summer demise.
Here’s hoping that your 7-days of Summer Slurping are green, glorious, and guilt-free!
And full of fruity treasure!
