Raw Raspberry Pudding – A Summer Surprise!

This delectable dish was an accidental discovery on my behalf. I had made up too much raspberry smoothie and so I put the last 1.5 cups into the fridge overnight. When I was feeling a bit peckish this afternoon I remembered it was there. YUM!!!

I’m going to do this more often, and especially when it’s summer (it’s winter in Australia, but this will be a great summer treat for many of you!). This is also a great way to get lots of greens in when you aren’t used to them because you can’t even taste the greens in this raw food recipe. If you don’t tell your friends or family that you added spinach, then there’s no way they will know it is in there.

chia seedsIf you remember a past edition of  Health in High Heels from last July, then you would know that the chia sees and leafy greens are calcium rich. Chia seeds are also very soothing to your gut.

This is a nutrient rich dessert that everybody will love.

This makes up about 4 or 5 cups, so would be fantastic for a family dessert.

Raw Raspberry Pudding

  • 150 g raspberries (frozen or fresh)
  • 80 – 100g baby spinach
  • 3 – 4 medium bananas
  • 1 – 2 Tbsp. raw honey (to taste)
  • 3 tsp. chia seeds, soaked in one cup of water

Directions:

Put it all into your blender and blend away! Once it is nice and smooth, pour into a dessert bowl or individual bowls and refrigerate for a few hours or overnight.

You could pretty it up with a few sprigs of mint.
