A Simple 3-Step Forumula for Making Great Salads

May is national salad month.  This is a perfect time to kick up your consumption of vegetables. The weather is warm, the sun is out, and doesn’t a great big bowl of salad sound wonderful? The best part of a salad is you can have one every day of the month and NEVER have the same mix twice! Not sure what you should put in your salad?

Here are a few ideas:

Step 1: Start with colorful leaves – skip the iceberg and try the following:

•    Spinach
•    Radicchio
•    Kale
•    Romaine
•    Arugula
•    Cabbage both green and red
•    Chard
•    Endive

Want to add several of them but don’t want to do the chopping?   There are many great organic mixes in your local produce section.  My current favorite is

Step 2: Now let’s add colors:

•    Carrots – grated-sliced however you like them
•    Peppers- green is good but we want color try red, yellow or orange
•    Tomatoes
•    Olives – green or black
•    Apples
•    Oranges
•    Cranberries –dried or fresh
•    Celery

Step 3: Add some protein:

•    Avocado
•    Sprouts
•    Nuts –your favorite ones
•    Seeds- any type will do

Step 4: Get it dressed up:

•    Olive oil
•    Flax oil
•    Herb Flavored oils
•    Flavored  vinegars
•     Natural salad dressings

*If you want to go easy on the fat content, you can do drizzle freshly squeezed grapefruit or citrus juice and a light sprinkling of sea week or Himalayan sea salt.

This list is just the beginning.  Get creative try new things.  Salads are an easy and tasty way to get your vegetables in and a quick and easy meal. If your family can’t agree on what they like in a salad create a salad bar and everyone can pick their favorites.

My current favorite salad is:

•    Spring Mix with fresh hers
•    Grated carrot
•    Apple
•    Avocado
•    Pumpkin or Sunflower seeds
•    Flax oil
