Another Way to Eat Leafy Greens (Kale and Creamy Tahini Dressing)

andrea-beamanThis past weekend I traveled to New York City to attend a class and on Saturday night I had the pleasure of attending a cooking class with Andrea Beaman. You may have heard of Andrea, she was a contestant on the show Top Chef. There were about 20 of us sitting in Andrea’s living room as she demonstrated 3 recipes.

I decided to come home and try one of her recipes.  I am using raw kale vs. the steamed kale Andrea used in the recipe. The creamy tahini dressing will offer a wonderful savory flavor, which is a nice change from the sweet flavors that I usually enjoy in my green smoothies.

You may use any variety of leafy greens that you have on hand. The beauty of creating your own recipes is what makes this blog so exciting and fun. I love to read the recipes that everyone creates and my hope is that we all continue to create mouth watering recipes for the world to enjoy!

kaleKale and Creamy Tahini Dressing Recipe

1 bunch kale (you may use any variety of leafy green) shredded

Creamy Tahini Dressing *

  • 1/3 c. sesame tahini
  • 3 tbsp. Nama Shoyu (Nama Shoyu is a raw unpasteurized soy sauce)
  • 3 tbsp. umeboshi vinegar (Made from umeboshi plums. You may also look for ume vinegar, it’s the same thing)
  • ½ bunch parsley, chopped
  • ½ bunch scallions, chopped
  • 1 c. water

Blend all ingredients for tahini dressing in a food processor or blender. Dress your leafy greens with the tahini dressing.

    Oh, I’m salivating over this one … I’m going to have to look for that vinegar soon so I can try a version of this (I can’t have the Nam Shoya because I think it has traces of gluten and I’m celiac, but I could use a little braggs aminos).

    I would LOVE to hear about more green dressings … such a great way to add blended greens to a regular salad … or could just put it over veggies instead of leafy greens. Yum!

    This dressing looks fabulous! This month’s Eating Well has a tahini dressing on page 66 that’s out-of-this world good, and I’ve been eating it on chopped kale and pea shoots for lunch — YUM! But I can’t wait to get my hands on some ume vinegar and try this!

    When I was young, my poor mother was tormented w/ mental illness. I was the eldest of 4 and I felt that I needed to protect my younger siblings. Food was not on mother’s list of things to do. So supper would be a loaf of white ‘Wonder’ bread and tea. Now that I have found this wonder raw journey, I’m spreading t around, should anyone ever asks me ‘why do I glow?’
    I share green smoothies and fun raw yummies w/ my friends and family.
    My little sister, lives down in Fl, we send care pkgs back and forth, one time I sent some Nori seaweed down, NOT! for my little sister, but my 10 y/o nephew who is a vegitarian! My sister called me to let me know that my pkge had arrived and my nephew was in the background screaming…’Where’s my seaweed?????’
