Savory Smoothie or Blended Soup for One (Cucumber, Tomatoes, Spring Onion, Parsely, Lemon)

- 4″ chunk continental cucumber
- 2 medium tomatoes
- 1 stalk eschallots (‘flat’ spring onion)
- handful parsley – remove most of stalks
- splash lemon juice
- splash olive oil (extra virgin, cold pressed)
- Sea Salt to taste
For a smoothie, blend everything together. You won’t need to add extra water because of the high water content of the tomatoes and cucumber.
If you would like some raw soup, then use a food processor and add some grated carrot before eating. You can also add cracked black pepper to season if you like.
This is a very refreshing mix and just the thing for a hot summer’s day.

P.S. For a creamier smoothie, add the flesh of one avocado.

I just realized I have these ingredients right now at home. I kow what I’m having for supper! I bet it will be just as good on a cold winter day here in Wisconsin!! I plan to do most of the ingredients first and blend it on my Soup setting on my blendtec and then add some additional tomato, cucumber, onion, and parsley at the end and just pulse it a bit so it’s chunky too. I’ll let you know how it was. And here I was thinking I would probably just have salad tonight.

I made this and ended up using it as a salad dressing and also poured some of just lots and lots of chunks of veggies and it was like a raw stew! Love the flexibility of green smoothies! Even my husband used it as a salad dressing and liked it, so it made a great addition or our supper.
