Tropical Green Smoothie with Coconut, Pineapple and Spinach

This past weekend my brother-in-law (my husband’s brother) came to visit and we started talking about the island of Hawaii where my mother-in-law was raised. I could only imagine growing up with the natural beauty of this breathtaking island living amongst the serenity of pure bliss.

My husband and I celebrated our first anniversary on the second largest island in Hawaii which is Maui, and I also had an opportunity to meet my mother-in-law’s sister. Maui was breathtaking, and I wondered what life was like living on a tropical island where the air was filled with the rich floral scent of a variety of tropical flowers that made me smile from ear to ear. After spending a week exploring the natural beauty of this island, I had the feeling that I would vacation in Hawaii for years to come.

I was inspired by my conversation with my brother-in-law so I decided to create a tropical green smoothie that our whole family could enjoy. I was filled with excitement and decided to create a pretty simple green smoothie that was full of flavor and easy for anyone to create.

Coconut, Pineapple and Spinach Smoothie

  • The meat from one young coconut (this website will give instructions on how to open a young coconut, http://www.rawguru.com/html/openyoungcoconut.html)
  • Coconut water (one large coconut should produce approx. 1 ½ cups of water)
  • 2 tablespoons of raw coconut oil
  • Half of a pineapple or one cup
  • Large handful of spinach

Blend and enjoy!
